When Thursday Night Feels Like a Friday

School is cancelled tomorrow due to the fact that it kind of snowed/rained today, so we did the only rational thing to do: we made a chocolate cake at 7 o’clock at night.

PJ’s favorite cake of all time (and the one he requests every birthday) is the Hershey’s chocolate one on the back of the Hershey’s cocoa box. His grandma used to make it when he was little and, while he’s not a big cake and icing guy, it’s the one cake he comes back to time and time again and reminds him of his childhood. Have you ever tried it? It’s the most moist and delicious cake there is. Promise. And it tastes the best when made late at night after school has been cancelled. Double promise.

The boys were especially interested in helping bake the cake, though they mostly just watched and kept saying: “ahhhh!” and “ohhhh wow!”. “R” kept smelling the batter over and over again, and putting his head so far into the bowl that we had to tell him to back up a few times, haha. He has a thing for smells and always requests to smell what we’re cooking. How cute is that?

PJ always says it reminds him of the chocolate cake from the movie Matilda when the kid has to eat the entire thing in front of the whole school. Can’t you picture it? We usually make the homemade icing on the back of the box, but tonight’s cake was so good it didn’t need any, so we ate it just as it was. And it was absolutely perfect.

We posted on our IG stories that school was cancelled and we were celebrating by making cake and thought nothing of it because school being cancelled as a kid = happy dance, right? But we received a message from a school teacher kindly letting us know we shouldn’t be celebrating the fact that there’s no school, as it’s hard enough for teachers to get kids excited about school as it is. She shared with us that teachers do the best they can and that they rely on parents to make sure kids like and look forward to school every day. We thanked her and appreciated her sharing that with us SO much. We had no idea. We’d never thought about it from that perspective before. The kids love going to school right now and we want to make sure it stays that way. The internet can be so great sometimes.
